So, in case anyone's been wondering where RNC gets his spreadsheets of data from, he uses a plugin that I wrote but hadn't released so I figured I should probably do that. It's just a simple plugin that outputs xloc,yloc,zloc,xvel,yvel,zvel,pitch,yaw,roll,attack,jump,duck info to a csv (spreadsheet) every tick.

Its pretty simple - commands are:

!rec - Starts recording
!st - Stops recording
!tog - Toggles recording

Every time you stop recording a csv will appear (either in /tf or /Team Fortress 2, I can't remember). Files are saved in chronological order.

The recordings show up in Team Fortress 2\tf\addons\sourcemod for me

Also, THERE'S A TOGGLE RECORDING OPTION!?
